How do induction hobs work?

Induction hobs rely on high-frequency electromagnets to generate heat. This heat is transferred directly to pans when they are placed on the hob. By using magnetic currents, induction hobs only heat the pan and not the surrounding area, meaning it uses less energy than other types of electric hobs. What pans work on induction hobs?

When using an induction hob, ferrous metal pans are required. Without a magnetic material, heat will not be able to transfer from the hob to the pan effectively.

What are the benefits of induction cooking?

One of the main benefits of induction cooking is the level of safety it brings to a kitchen. When using an induction hob only the surface area of your pan is heated on an induction hob, meaning the rest of the cooking zone remains cool. When a pan is removed from a cooking zone, the induction current breaks and heat begins to reduce straight away, helping protect you and your family from burns.
